Playstyle and profile - I'll divide this is multiple sections for easier readability.
Physically, Querfeld isn't an athletic freak, doesn't possess elite mobility, pace, agility, but has great leaping (jumping) ability. Not too flat-footed, can move fluidly from side to side, turn and even avoid pressure with some quick footwork when he gets on the ball.
Due to this lack of elite athleticism, question is how does he cope when he has to cover large spaces, when he has to sprint in most of his defensive actions?
Dueling is something he excels at, he engages duels with great timing, intensity and has that relentless mentality when it comes to challenging players. In ground duels he comes at you with pace, from angles that make sense and is comfortable fighting with big, strong forwards for position. He's a very intelligent player, so he chooses his duels correctly and wins them at high volume and with high success.
Aerially, Querfeld has excellent timing, impressive vertical jump and the reach, once he's in the air he's once again impressive. His heading ability to clear danger, to attack crosses and direct the headers towards his teammates or areas without opposing players sticks out.
He's a high volume, high success rate aerial duelist, someone who ensures safety against aerially dominant teams. Spatial awareness is excellent, rarely misjudges ball trajectory.

Possession, part of the game that's a mixed bag for me. He's a player who knows that ball travels faster than a person, so naturally he prefers passing and isn't afraid to hit most outrageous passes in the book, risky or not.
In situations where he's pressed high, he's very comfortable on the ball, safe, composed and evades pressure, creates separation to hit that next pass.
Not a volume ball carrier and not a pacey ball carrier, most of his carries are simple ones just enough to evade pressure and get enough time and space to make a pass.
Once intensity goes up, will he be able to carry the ball forward with pace and security is where my small doubts come up.
Passing is another area Leopold is outrageously good at. Union Berlin is a team with lowest possession in top 5 leagues in Europe, so his volume of passes completed is extremely low, but don't get it twisted, he is outstanding passer of the ball. A team that doesn't rely on possession, isn't the most dangerous counter-attacking team either often goes long and tries to find runners into space.
Oliver Burke and Ilyas Ansah offer outlet, target and drop deep so they receive a large amounts of his passes.
Querfeld consistently goes long and does with outstand accuracy and power in his passes, low driven passes that cut through teams, powerful high passes, lob passes - he hits that vertically, diagonally and can do so with both feet, but he does use his right more often than not.
He attempts high number of through balls as well and a lot of them result in shoot attempts from his teammates or are the start of dangerous attack.
